Gnocchi Gratin

For a twist on the classic mac ‘n cheese, take  comfort food up a notch with Gnocchi Gratin. Substitute  the mozzarella with your favorite meltable cheese, like gorgonzola or gruyere. mmmm

1 bag of frozen gnocchi (let’s make it easy)
1 cup heavy cream
1 sprig rosemary or thyme
1 1/4 slice ginger
3 tablespoons parmesan cheese
1 tablespoon butter
3 tablespoons breadcrumbs
4 ounces mozzarella (or more-get as cheesy as you want!)

Bring cream, rosemary, and ginger to a boil in a small saucepan
Remove from heat, cover and set aside for 30 minutes
Preheat oven to 375 degrees

Boil water and cook gnocchi for about 2-3 minutes, until gnocchi float to the surface
Transfer gnocchi into a baking dish lightly coated with butter
Pour cream mixture over thegnocchi in the dish
Mix parmesan, butter, and breadcrumbs in a bowl
Cut up small pieces of mozzarella and scatter over gnocchi
Sprinkle breadcrumb mixture and any extra parmesan cheese over the dish
Bake until bubbly and brown, about 25-30 minutes
