Kale and Corn Salad

We promised you healthy foods, yet-we’ll admit-we’ve been on quite the baking bender. So here’s a big dose of healthy for you, in the form of the dark leafy green powerhouse, Kale. It’s full of vitamins A, C & K, iron, antioxidants and fiber, and can be eaten raw or cooked. If raw kale tastes a little too green and tough for you, give this guy a second chance sauteed (or smother with chopped avocado raw–we swear it transforms it). This dish makes a delicious and healthy side, or can stand alone as a perfect post-yoga meal when you can’t stomach anything too heavy.

Ingredients:
5 stalks kale, leaves removed from stems and torn


2 cups corn (fresh or frozen)
1/2 large red onion, chopped


3 gloves garlic, minced
2 tbsp olive oil
pinch of salt
1/2 tsp crushed red pepper


Steps:
Heat olive oil in a large saucepan
Sauté onion and garlic over medium heat until tender
Add kale, cover with 1/2 cup water
Add corn, sprinkle with crushed red pepper


Stir, cover pan and let simmer over medium heat until kale is tender, about 10 minutes
Sprinkle with salt to taste and serve!
