Anita’s Chocolate Chip Banana Bread

This one’s a an oldie but a goodie. The recipe has been passed around since the good ol days of middle school, and has stood the test of time from an after-school snack, to late night treat, to morning pre-gym fuel. We think the secret sauce is the olive oil, which is how our mom and grandma have always baked-we actually never had vegetable oil in our house. The other–arguably more crucial–secret sauce is a huuge helping of chocolate chips. We’ve made it with whole wheat flour before, half whole wheat half white, with and without walnuts and even added flax seeds. It’s moist and delicious–not too sweet–and a great breakfast, snack or dessert choice, in loaf or muffin form.

Ingredients
1 1/2 cups flour
1/2 cup sugar
2 ripe bananas, mashed (the riper the sweeter, so don’t hate on those browned bananas)
2 eggs (if you’re out of eggs, sub 1/2 banana per egg)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup olive oil
1 cup chocolate chips
1/2 cup walnuts

Steps
Preheat oven to 350 degrees
Combine dry ingredients
Add beaten eggs and mashed bananas

 Stir in chocolate chips and walnuts, and any additions of your choice

Pour in to a lightly greased loaf pan or muffin tray

Bake for 45 minutes, or until a toothpick comes out clean
