Chocolate Pie

Happy Easter everyone! We had an exceptionally exciting weekend – our sister got engaged! We are so thrilled for her, and let’s be real, so excited to be in a wedding! Even though this past Sunday was not our Easter (Greek Easter is this Sunday), we still celebrated with lots of food and this amaazing chocolate pie. Chocolate Pie has been on our list of recipes to try for a while now. Then last week we finally saw The Help, and we were inspired by Minnie and her famous “chocolate” pie. This puppy is rich, creamy, and melt-in-your-mouth delicious. The crust is made with hazelnuts, but you can make virtually any kind of crust you want. Be careful, you’ll find yourself saying “just one more little sliver” over and over.

1 cup flour
1/4 cup sugar
1/2 cup hazelnuts, chopped
6 tbsp butter, melted
1/4 tsp salt

2 oz unsweetened chocolate
1 stick butter, softened
3/4 cup sugar
1 tsp vanilla
2 eggs

Preheat the oven to 400 degrees
In a blender or food processor, process the flour, sugar, hazelnuts, and salt together until it’s clump-free
Transfer into a bowl, mix in the melted butter, and firmly press mixture into a 9 inch pie dish
Bake for about 15 minutes or until golden brown
Remove  from the oven and let cool completely

While the crust is cooling, melt your chocolate over a double broiler
When the chocolate is completely melted, remove from heat and let cool

Cream the softened butter and sugar together with a blender until light and fluffy
Add the vanilla, followed by the melted chocolate, and beat until incorporated
Add each egg one at a time, and beat for another 7-8 minutes until light and fluffy

Pour the filling into the cooled pie crust, refrigerate for at least 2 hours, then dig in!
You won’t regret it! Well, maybe you will ;)
