Mediterranean Quinoa Griddle

Truth be told, this dish is the result of a failed attempt in the kitchen. On a Monday after an NYC bottomless mimosa/bloody/sangria brunch kinda weekend, we needed something light and detox-like for dinner.  Inspired by our gf who’s attempting a 21 day vegan cleanse, we decided to try our hand at vegan veggie burgers tonight. And we failed. Miserably. But we did end up with a surprise concoction that we actually loved and will likely make again. Turns out that grilling quinoa makes it slightly crunchy and brings out a delicious smokey flavor in the sun dried tomatoes. And so was born the Mediterranean Quinoa Griddle.
Stay tuned for real vegan veggie burgers that don’t crumble as soon as they hit the griddle…we will conquer them someday soon.

1 cup quinoa

2/3 cup sun dried tomatoes,  diced

2/3 cup olives, diced

2/3 cup mushrooms, diced

olive oil
1/4 teaspoon oregano
Dash of onion powder, garlic powder, salt & pepper

Cook the quinoa according to directions
Dice the veggies and mix together in a bowl
Sprinkle with spices and olive oil
(Humor yourself and form in to patties)

Grill over medium heat
Flip patties after about 4 minutes, watch them crumble, then grill the mixture for another 4 minutes
Serve hot!
