Grilled Peach, Garbanzo, Kale & Quinoa (& dessert!)

The smell of fresh peaches equals summer in my mind. So incorporating peaches in to every meal seemed liked an obvious decision. Topped on greek yogurt for breakfast, a sweet snack after lunch, and then grilled for dinner and dessert. I’d never tried it before, but a quick grilling really brings out the juicy, peach sweetness. It steals the show, so the rest of the meal is kept simple with garbanzo beans, kale and quinoa. The dessert is a cinch to make and doesn’t get any healthier – and surprisingly satisfying, coming from a chocaholic – than fruit and nuts. This recipe serves a party of one (sista’s still in Europe), so alter accordingly if you’re feeding more.

1 ripe peach

1/4 cup quinoa, cooked
1 stalk kale, torn

1/4 cup garbanzo beans, soaked and cooked (or canned if you’re laazy)

2 tbsp olive oil
1 tbsp white wine vinegar
Dash of coriander
Dash of pepper
For dessert:
1/8 cup chopped macadamia nuts
Sprinkle of cinnamon

Slice peach in half, place on grill (or griddle) flat side down on medium heat

Whisk olive oil, vinegar, coriander, pepper together

Tear kale in to bite sized pieces
Check on peaches, remove after ~5 minutes grilling, once char lines appear

Combine quinoa, kale and garbanzo beans as the peach cools
Dice  one half of peach, stir in to quinoa mix, drizzle with dressing and add salt & pepper to taste

…Now time for Dessert! 
Top the other peach half with chopped macadamia nuts, sprinkle with cinnamon and voila!
