Yiayia’s Fasolakia

This recipe’s straight from the homeland. Yiayia used to make us fasolakia, then shared her delicious secrets with our mamma, who then passed on the love to Stephy while she was visiting last month. Fasolakia (green beans) are a light, yet hearty comfort food. Fasolakia are meant to be served hot, but are surprisingly satisfying cold, which makes this an ideal summer dinner recipe. Yiayia’s recipes usually require a little extra prep time, but the end results are well worth the effort. Give em a whirl. Opa!

Ingredients
(serves 4)
1 lb green beans, stems removed

10 small potatoes, peeled and quartered
1 package fresh dill, coarsely chopped
1 can tomatoes, with sauce
1 onion, finally chopped
1 clove garlic, minced
Olive oil

Steps
Drizzle olive oil across the bottom of a big pot, toss in the onions and garlic and brown
Add the green beans, potatoes, dill, and tomato

Add water until the ingredients are almost covered
Cook for ~40 minutes, until the potatoes are soft
Drizzle some extra olive oil (about 1-2 circles around the pot), and add salt & pepper to taste
Serve with some crusty bread and feta, and you’re basically dining in Greece
