S’mores Bars

Alright, friends. We’ve got a treat for you. A Halloween party/Hurricane Sandy/easiest recipe you could imagine kind of treat. Whatever the excuse, these s’mores bars will please kids of all ages, 2-100. Halloween seems to bring out the crazy in us all – makes us think it’s OK to eat copious amounts of candy,  because hey, they’re only bite-sized and candy corn only comes out once a year, or OK to go out to a bar wearing face paint, fangs or a wig. Or in this case, OK to buy mini Graham crackers disguised as “cereal,” mix them with melted marshmallows and chocolate chips, and call it “baking.” So, you have our permission. Bake away. Your halloween party guests, or stir-crazy, cabin-feverish roommates will thank you.

1 bag mini marshmallows (set aside 2 cups)

8 cups Graham Cracker cereal

2 cups semisweet chocolate chips

1/4 cup melted butter

Melt the butter in a medium pot and stir in the marshmallows (save the 2 cups)
Over low heat, fold in the Graham Cracker Cereal

Gently fold in the remaining 2 cups of marshmallows

Fold in the chocolate chips

Once sticky and gooey, remove from heat

Pour in to a baking dish with ~3 inch sides and pat the mixture flat
Refrigerate for ~20 minutes until cool
Cut in to squares and devour
