Chocolate Salami

Merry Christmas Eve from Switzerland! We’re in the homeland celebrating the holidays, which mean views of the Zurich Lake and the Alps, Anita’s delicous homemade dinners and lots (and lots) of home baked Swiss and Greek Christmas cookies. It also means watching European TV, with British, German, Italian and French channels. We caught Nigella Lawson’s Christmas special on one of the British channels the other night, and decided we had to give her Chocolate Salami a whirl. Afterall, Nigella told us that during the holidays you must indulge. Amen, sista. This chocolate salami looks like actual salami (kinda creepy, kinda fun), is super easy to make and did not disappoint. Our sister and her fiancee just arrived, who has annoyingly strong self control when it comes to sweets, so we’ll see if even he can resist. Happy holidays!


7 ounces chocolate (we used one bar of dark, one bar of milk)
3/4 cup raw almonds
3/4 cup raw hazelnuts
1/3 cup raw pistachios (preferably unsalted)
1 1/8 cup coarsely crushed Amaretti Cookies
1/2 cup butter
3/4 cup sugar
1 egg
2 tablespoons espresso powder
1 tablespoon powdered sugar
Splash of Amaretto

Cream butter, sugar and egg (preferably with an old fashioned contraption like this one)
Melt the chocolate over low heat
Coarsely chop the nuts
Add the melted chocolate to the creamed mixture
Stir in the espresso powder
Add the chopped nuts and the Amaretti cookies
Stir in a splash (or two!) of Amaretto
Roll the mixture in to a ball and regrigerate for at least an hour, until firm
Remove from the fridge and roll, like a rolling pin, in to a salami shape
Place the roll on to plastic wrap and wrap tightly, twirling the ends closed
Refrigerate for another two hours or so until firm
Remove from the fridge, carefully cut away the plastic wrap and lighly dust with powdered sugar
Tie it up with string – we think this is mostly for salami effect, but it does help hold it all together.
Slice and serve!
