Peanut Butter Pie

We’re welcoming summer with the perfect light, refreshing, bikini-friendly dessert. Juust kidding. This peanut butter pie is rich and creamy, and worth the extra crunches. We’re celebrating bridal showers, first 1/2 marathons, engagements, new apartments, college reunions, Wanderlust…plenty of occasions for peanut butter pie. YOLO.

Ingredients
Crust:
-1 cup butter
-4 cups vanilla wafers, finely crushed

Filling:
-1 1/2 cups heavy cream
-2 cups cream cheese
-1 1/2 cups peanut butter
-1/2 cup confectioner sugar
-1 tbl + 1 tsp vanilla extract
-Caramel topping
-1 bag mini Reese’s peanut butter cups, crushed
-1 cup roasted peanuts

Steps
Preheat over to 350 degrees
Combine melted butter and wafer crumbs and press into pie dish

Bake for 8 minutes until crust has set. Let cool.
Beat the heavy cream until peaks form, set aside

Beat the cream cheese in medium size bowl until smooth and creamy
Add peanut butter, sugar, and vanilla extract and mix well

Gently fold the whipped cream into the cream cheese mixture until combined and set aside
Drizzle caramel onto your cooled pie crust

Spread the filling over the crust
Sprinkle Reese’s Peanut Butter Cups and peanuts on top
Cover and refrigerator for ~4 hours until set
Dig in!
