This was our first shot at a galette, fueled by Pinterest-envy. Not really knowing what a galette’s supposed to taste like, we’d say it turned out pretty well! It’s packed with healthy kale and is super cheesy, but not greasy and much lighter than pizza – ideal for a summer dinner. We’re planning to recreate this recipe with some additions, like spinach, mushrooms and asparagus, and maybe even get our lazy butts to make our own dough next time.
Whole wheat dough
3 cups kale, torn
1 cup feta cheese
1 1/2 cups ricotta cheese
1/2 cup green onion, diced
1 tbsp honey
1/2 tsp salt
Preheat oven to 400 degrees
In a saucepan, heat olive oil over medium heat. Sauté green onions for 2 minutes
Add kale and sauté until slightly wilted. Remove from heat.
In a medium bowl, whip ricotta cheese, feta, honey, egg white and salt
Fold in kale/onions
On a floured surface, roll the dough into a thin circle and transfer to a lined baking sheet
Spoon the kale mixture onto the center of the dough, leaving a 2 inch border
Fold the dough edges over the mixture to create a crust
Combine egg yolk and 1 tsp water, brush the crust with egg yolk mixture
Bake until the crust is golden brown (35-40 mins) and serve!
