Almond protein bites

We’re slackin, and we apologize. We’ve been packing up and moving apartments, attending bachelorette partays and weddings, and getting ready to star in our big sister’s wedding over Labor Day Weekend. We’ve been sticking to easy meals to prep for the week, like stuffed peppers and stir fry, and trying to get as many workouts in as possible to outshine the bride. To that extent, these almond protein bites have been fueling our pilates, yoga, Core Fusion and runs along the river.  In an effort to get as crunchy granola sustainable as possible, we used the pulp leftover from Steph’s almond milk for the base of the bites, but almonds chopped up in a blender would work as well. We’ve made two variations, one with dates to sweeten and one with honey, but raisins, cranberries, figs or apricots would all achieve a similar binding consistency.

Ingredients
1/4 cup ground almonds
1/2 cup chopped dates
1/8 cup flax seeds
1/8 cup raw sunflower seeds

2 tbsp chia seeds
2 tbsp flax seeds

Steps
Mix dry ingredients in a large bowl
Add fruit and enough honey until the mixture starts to bind
Stir and scoop out small balls using an icecream scooper

Arrange on a plate and freeze for about 2 hours
Once firm, transfer to an airtight container and refrigerate

Pop one before a workout to quell hunger and keep you fueled.
