Oatmeal energy bites

We’re training for the Ragnar Relay, 190 miles from Hull to Provincetown, Cape Cod, with ten other runners on our team. By training we mean we’ve been on a handful of runs (eek) since the weather finally turned to spring, but completely inspired by Monday’s Boston Marathon (mind over matter, right?). While we may be lacking on mileage, we have been perfecting our race day fuel. Priorities, people. These oatmeal energy bites will be packed in our group’s Suburban for our epic run, along with headlamps, reflective vests and plenty of pump up jams.

2 1/2 cups regular rolled oats
3 tbsp chia seed
1/2 cup ground flax
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1.5 cups almond milk
1/2 cup honey
2 tbsp almond butter
1 banana, chopped
1 tbsp pure vanilla extract

Preheat oven to 350
In a large bowl, mix oats, chia, flax, baking powder, salt, cinnamon
In a small bowl, mix milk, honey, almond butter, banana, vanilla until smooth
Combine wet & dry mixtures
Pour mixture into a lined baking pan, bake 35-40 mins until lightly golden
Cool, slice & serve!
