Early bird smoothie

After nine glorious days of St. Lucian sun, sea, and daily pina coladas and fresh mango daiquiris, it’s time to get some kale smoothies back in the mix. Lucky for me, post-honeymoon mixin involves the dynamite Vitamix, courtesy of my generous sisters/co-MOHs. I was skeptical of its power before I saw it in action, but it magically whips up thick, smooth drinks in seconds, void of the kale bits that used to inevitably make their way into my smoothies. Steph and I are road tripping up to the mountains of Vermont this weekend to get our yogi zen on at Wanderlust Stratton, so these smoothies will serve as our morning fuel. We included instant espresso since we’re hitting the road bright and early, but the smoothie will be just as delicious – and likely a tad sweeter – without it. We usually don’t measure out smoothie ingredients, but after these adorable Anthro whale tail measuring cups arrived as a wedding gift, things are getting very precise in the English kitchen.

Ingredients
Serves two
1 large bunch kale
1 cup water
1/2 cup mango
1/2 cup blueberries
1/2 banana
1/2 cup ice
1 small avocado
1 tbsp cinnamon
2 tbsp instant espresso
2 tbsp ground flax
1 tsp honey
2 dates
