Slow Cooker Pulled Chicken

Inspired by the deliciously salty-sweet pulled pork we enjoyed at a party recently, we opted for a healthier take with slow cooker pulled chicken this week. It really doesn’t get much easier – just chop, layer and turn on the slow cooker. We cooked this on high for 3 1/2 hours, but if you have the time, it likely tastes even better cooked on low for six hours or so. We served it over brown rice which made it like a jambalaya, but you could serve on buns or even solo.

Ingredients
Serves six
2 lbs chicken breast
1 cup tomato purée
4 large carrots, chopped
1 onion, chopped
2 cups sliced mushrooms
3 tomatoes, diced
1 tsp cumin
1 tsp coriander
2 tsp cayenne pepper
2 tsp salt

Steps
Layer chicken breasts on bottom of slow cooker
Pour tomato purée over chicken
Top with veggies and spices
Slow cook
