These sparkling cranberries double as a holiday decoration and a dessert. Boom. And they require only three ingredients and minimal prep. The raw cranberries maintain their crunchy pop, the simple syrup cuts the tartness that keeps most people from eating cranberries raw, and the dried sugar casts a sparkly sheen that looks great on your coffee table.
12 oz. raw cranberries, rinsed
1 3/4 cup granulated sugar
1 cup water
In a medium pan, heat water and 1 cup sugar until sugar is dissolved (don’t boil)
Remove from heat and allow the liquid to cool to room temperature
Pour liquid over cranberries
Cover & refrigerate overnight
Strain cranberries and pat dry
Roll cranberries in remaining sugar until cranberries are coated
Place on a baking sheet and let sugar harden on cranberries for a few hours
Display at room temperature and enjoy!
