Salted (Date) Caramel Peanut Butter Truffles

Never judge a book by its cover. Don’t knock it till you try it. These wise words are all embodied by these amaaazing date “caramel” truffles. Case in point: upon walking into the kitchen as I was struggling to blend the dates into their supposed caramel consistency, our anonymous taste tester looked on with skepticism and exclaimed, “can’t we just have brownies??” (Mind you, this is the same taste tester who recently came home with Fruity Pebbles at the ripe age of 28..) But when the moment of truth arrived and he took the first bite, his tune quickly changed to “these are amazing.” That, my friends, may be my crowning achievement of 2014. I served these at our annual sibling & sibling-in-law Christmas celebration and they pleased a range of tastes – from the open-minded to the brutally honest to the dessert-apathetic. They’re caramel-y, peanut-buttery, salty-sweet goodness. And since their primary ingredient is dates, they pretty much don’t even count as dessert. Happy 2015 to you.

Makes 12 medium-sized truffles
12 medjool dates, pitted
2 1/2 tbsp coconut oil
3/4 tsp sea salt
1/4 cup creamy, unsalted natural peanut butter
1 cup semisweet chocolate chips

Blend dates + 1 tbsp coconut oil + 3/4 tsp sea salt in a food processor until a paste forms (add drops of warm water if it’s not blending well)
Freeze for 30 minutes
Using a teaspoon, scoop small balls of “caramel” and place on a baking sheet
Freeze for another 30 minutes
Melt peanut butter and 1/2 tbsp coconut oil over medium heat
Remove truffles from freezer and drizzle each with peanut butter
Freeze for another 30 minutes until the peanut butter has formed a shell
Melt chocolate chips + 1 tbsp coconut oil over a double boiler
Remove truffles from freezer and using a fork, lower each truffle into melted chocolate
Spoon chocolate evenly over each truffle until coated
Return to baking sheet, and top each truffle with a sprinkle of sea salt
Freeze for another 30 minutes until chocolate has hardened
Before serving, let truffles sit out for 15 minutes to soften
