Sunflower Seed Granola

This granola recipe resulted from an epic fail of “The Bread That Will Change Your Whole World,” flagged on Facebook by our ever so tech-savvy mamma. We’re determined to get the world-changing bread right, but in the meantime, turned the crumbly mess of seeds and grains into granola. Where there’s a will, there’s a way. The granola is crunchy, nutty, and not too sweet (even our Fruity Pebbles-eating anonymous taste tester deemed it “not bad”) and we’re loving it solo with milk, or sprinkled over Greek yogurt. If you want more crunchy clusters, increase the ratio of liquid to dry ingredients.

Ingredients
1 cup old fashioned oats
1/2 cup raw unsalted sunflower seeds
1 tbsp flax seeds
1 tbsp chia seeds
1/2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ground cloves
1/4 tsp vanilla extract
1 tbsp coconut oil
2 tbsp honey

Steps
Preheat oven to 250 degrees
Melt coconut oil & honey over a double boiler
Add all ingredients and stir well until evenly coated
Spread evenly on a baking sheet
Bake for 40 minutes
