Goat Cheese Kalamata Olive Spread

This spread was a big hit at the Super Bowl domination Sunday (Go Pats!), but can be made for any occasion – from brunch to dinner appetizers. The key to the dish is the rosemary, which bakes into the goat cheese and adds a nice deep flavor. We served it with baguette slices, but it would pair well with crackers as well. Big shout out to our great friend on the West Coast for tipping us off to the recipe.


6 oz. log of goat cheese
1 tbsp Extra Virgin Olive Oil
1 cup whole Kalamata olives, pitted
1 cup rosemary sprigs
2 cloves garlic, minced, roasted

Spread out the goat cheese as evenly as possible
Drizzle olive oil on the goat cheese
Place your olives on top of the goat cheese, press down gently (you can use whole olives, cut them in half, or chop them up)
Sprinkle rosemary and roasted garlic over the goat cheese, press down gently
Bake at 350 degrees for ~15 minutes until the spread is bubbling
Dig in! (Delicious warm or at room temperature)
