Red Cabbage + Turmeric Slaw

We made this slaw to fancify taco night last Friday after a long week of work travel. It hit the spot (as did our choice of cinematic masterpiece Jurrasic World), and has since served us well as both a weekend snack and a weekday salad topper. The bright yellow color comes from the turmeric, which we’ve been sprinkling on everything as of late. (Learn more about its anti-inflammatory superfood-ness and you’ll be sprinkling it like confetti too.) The slaw is light and packed with flavor, and takes about 10 mins to prep. It also provided a nice balance to the pint of mint choc chip ice cream we later polished off as a trio. Speaking of balance, we’re thinking this slaw could make for a quick and healthy Thanksgiving side dish too.

Ingredients
Serves 6
1 head red cabbage
2 limes
1/2 red onion
1/2 cup fresh cilantro
4 tbsp olive oil
1/4 tsp turmeric
1/2 tsp chili powder
1/4 tsp salt

Steps
Slice cabbage into thin strips + chop cilantro + dice red onion
Combine in a large bowl
Top with the juice of 2 limes, olive oil, spices
Mix well + serve!
