Amaretti Chocolate Cake

Chocolate cake is for breakfast today, because it’s New Year’s Eve and she travelled all the way from mamma’s kitchen in Switzerland. Recipe to come in 2014. Now time to set some new intentions for a fresh new year. Happy New Year!

Turns out 2014 has been a busy one thus far, and apparently we’re playing hard to get. Thirty days later, and a few days after National Chocolate Cake Day (how did we not know about that??), here’s the recipe. In our defense, we had to convert the recipe from Swiss German and the metric system…

ingredients
7 oz. dark chocolate (70%)
1/4 cup espresso
1 1/3 sticks butter, softened
7 oz. amaretti cookies, ground finely
3.5 oz almonds, crushed
2 tbsp flour
1 tsp baking powder
1/3 cup sugar
Pinch of salt
4 eggs
Powdered sugar

steps
Preheat oven to 350 degrees
Over a double boiler, melt chocolate, espresso and butter
In a medium bowl, mix amaretti cookies, almonds, flour and baking powder
In a small bowl, beat eggs, sugar and salt until smooth
Combine melted chocolate, amaretti mixture and stir into egg mixture
Pour into a greased cake pan
Bake for one hour
Sift powdered sugar over cake
Indulge! For breakfast and/or dessert..
