Hemp + Chia + Pepita Banana Bread

We deviated from Anita’s tried and true banana bread recipe this time around beacuse we were all out of chocolate chips (the horror!). This version is a tad healthier, with protein-packed hemp seeds, fiber-rich chia seeds and magnesium+iron filled pepitas. It has more of a nutty flavor, isn’t too sweet and is super moist (as much as we hate that word, it is the best descriptor). Even our snobbiest of banana bread taste testers gave this version a big thumbs up. The superfood add-ons can get pricey (especially if you shop at Whole Foods), but you can find reasonably priced chia seeds and hemp seeds at Trader Joe’s, and pepitas in the bulk food section at WF. They’re super versatile too — we sprinkle all three on greek yogurt for breakfast, add them to granola and homemade cereal, and mix into smoothies. Ingredients
3 ripe bananas (the riper the better!)
1 1/2 cups flour
1/2 cup sugar
2 eggs
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup olive oil
1 tbsp chia seeds
1 tbsp raw shelled hemp seeds
2 tbsp pepitas

Steps
Preheat oven to 350 degrees
Combine dry ingredients in a large bowl
Add beaten eggs and mashed bananas
Pour into a lightly greased muffin pan
Bake for ~40 mins, until a toothpick comes out clean
Let cool & enjoy!
