Quinoa Bars

Another week, another bar. This time, the main ingredient is good old quinoa. These bars are packed with protein and natural sweeteners, making them both delicious and nutritious. They’ve made their rounds to new taste testers (one of our most loyal readers in NYC received a surprise batch a few weeks back), and received rave reviews. If you’re not a coconut fan, nix the coconut flakes and substitute the coconut oil for an oil of your choice. The original recipe calls to dip them in chocolate, which we’ll be sure to try next time around. For now, the wedding diet is totally cramping our style.

Ingredients:
1 cup uncooked quinoa
1 cup oats
1/2 cup coconut flakes
1 cup combination of dried fruit and nuts (we used peanuts, almonds, dates, figs, apricots), chopped
1/4 tsp salt
1/2 cup peanut butter
3/4 cup honey
1 tbl coconut oil
3 tbl brown sugar (optional)

Steps
Preheat your oven to 350 F. Toast your quinoa and oats in the oven for about 10 minutes and place in a mixing bowl with your mixed nuts and fruit.

In a saucepan, heat your peanut butter, honey, oil, and brown sugar if applicable. Bring the mixture to a boil, remove from heat, and pour over your nut and oat mixture.

Mix well, and pour your mixture into a greased baking dish. Press down slightly so that your bars stay together.

Bake for about 20 minutes (keep an eye on them so they don’t burn). Let cool and cut into pieces.
