These have become my go-to party cookie – New Years, Super Bowl, you name it. Minimal ingredients (most of which you usually have on-hand), ready in under 20 minutes, and they’re a major crowd pleaser. With PB as the main ingredient, you might even go so far as to categorize them as protein bar rather than cookie. Just sayin. Plus, they’re flourless for any G-Free cookie monsters out there. Treat yo self.
1 cup creamy peanut butter
3/4 cup sugar
1/2 tsp baking soda
1/4 tsp salt
1 cup semisweet chocolate chips
Preheat oven to 350 degrees
Combine all ingredients (except choc, chips) in a medium bowl
Stir in chocolate chips
Drop rounded teaspoons on baking sheet
Bake for 12 mins until puffy and lightly golden brown
Let cool – if willpower allows – and serve!
